I work from home and my boss sent me a VOIP phone (that is tied to the main telephone system at the office) to plug in on my residential broadband service. Since they can track and record calls, I need to know what other information can they obtain. Can they capture internet use on the network? Can they listen to my personal VOIP service? Would they get my wireless network key? ETC....

Without knowing exactly what they are installing, it is not really possible to know if your network is vulnerable, or not, with their device installed.
If it is just a straight forward VoIP IP-Phone they want you to install on their behalf, then I don't think they can monitor anything other than your use over their VoIP service.
If you have your own separate personal VoIP device and VoIP provider at your home, then I do not think they can monitor that. And, I don't think they can monitor your Internet traffic over your home network, or intercept your network key either.
This is all assuming they are only having you install the IP-Phone and nothing else - no software. If you have to install their software on your PC, then there is no telling what it can monitor...
